  •     Before you start working the meat, you will have to have your barbecue ready. Preheating it will be the first thing you should do. In the case of having a gas barbecue, light only the part of the burners, which will give you an indirect fire. On the other hand, if it is a charcoal barbecue, place the charcoal on one side of it, thus creating an area of ​​indirect heat.
  •     As the barbecue is heated, proceed to prepare the chicken. Rinse it with cold water and remove the bag of organ meats inside (you can ask the butcher to do this). Dry it well and smear it with olive oil, both inside and out.
  •     Then sprinkle with salt and ground pepper to your liking. In order to make it taste better, you can fill the inside with sage, or a little tarragon. A few slices of lemon will also help make it tastier. Never fill with breadcrumbs, as this delays the cooking time.
  •     With the chicken seasoned and the barbecue ready, the cooking model has arrived. Oil the grill and place the chicken in the coldest area, with the breast facing up. Close the lid and now everything will be defined by your time control. In the case of using charcoal barbecue, stir the embers before placing the chicken.
  •     The cooking time is about 90 minutes, so you will have to be careful to prevent the meat from burning. After 40 minutes, flip the chicken using tongs. Do not use a barbecue fork, because the holes you make in the meat will cause more heat to enter the inside and it will be dry.
  •     After another 40 minutes you will have to measure the temperature of the chicken, and thus you will know where it is cooked. Using a kitchen thermometer, poke the breast area. If the temperature is 74º C, then you can remove it and let it rest for about 10 minutes. If not, leave it on the barbecue until it reaches that temperature.
  •     If you want to give it a good flavor, you can bathe the chicken in a barbecue sauce, in case you have not cooked it with any filling. And as a garnish, some roasted or fried potatoes will be perfect.

1 tablespoon mustard (it is best to use old-fashioned mustard, either crushed or grain)
2 tablespoons of honey
2 tablespoons ketchup
200 gr of tomato sauce (better if it is homemade) or crushed natural tomato.
1 tablespoon soy sauce
4 tablespoons vinegar
1 tablespoon of olive oil or similar.
7-8 drops of tabasco (optional, and you can add the amount to your liking, try the sauce)
Ground black pepper and salt.

Preparing the barbecue sauce for the chicken

We wash the chives, remove the green part and the roots and chop them very finely. In a non-stick frying pan with the olive oil and with the heat over medium heat, add the chives and a little salt and let it cook until it is soft and transparent, without getting to brown (it will take almost 10 minutes).

When the onion is practically done, add the brown sugar and stir well for a couple of minutes so that the onion finishes caramelizing completely.

Then add the tomato sauce and stir well, let it cook together for another couple of minutes.

Now is the time to add the rest of the ingredients: the Perrins sauce, the sweet (or spicy) paprika, the mustard, the honey, the ketchup, the soy sauce, the vinegar, ground black pepper to taste and the Tabasco (optional , only if you want to give it a spicy touch).

Let everything cook over a low heat for 5 minutes, stirring from time to time and trying not to stick. Taste the sauce to rectify its flavor and make it to your liking.
